Using the world’s first ultrasonic analysis AI, the fat content of albacore tuna can be more accurately determined than traditional tail-cutting by skilled workers.

The system, based on Fujitsu’s AI technology Kozuchi, uses low-frequency ultrasound to inspect frozen tuna and identify fat content. It can operate manually or fully automatically, processing about 30 tons per day (average 15 kg per fish, 7 hours).

Specialized, food-grade equipment was developed for durability, washability, and high processing capacity, suitable for seafood processing environments.

    Frozen fish sorting techniques are tacit knowledge and require time to acquire. With the number of fishery workers decreasing year by year, it is an urgent issue to reduce the workload of workers and reducing tasks that only specific individuals can perform.

    For mid to lower-priced tuna, such as yellowfin and albacore tuna, there is a lack of personnel to conduct full scale inspection, resulting in missed opportunities to get the right price.
    In addition, products that reach the market with no sorting or inaccurate sorting undermine quality consistency, discouraging consumers from purchasing tuna.

    Tail-cutting and sorting by hand is only about 70% accurate in judgment, even for highly skilled workers. (Assuming the actual fat content measurement results from physical and chemical testing as the true value.) In addition, standards differ among manufacturing sites and countries.
