We're starting a revolution!
We have been researching castella baking using Nanban kilns for 50 years.
And for the past 10 years, we have been researching casting castella using the ZEN steam rack.

This time, we'll use ZEN to bake 50 loaves of Gosan-yaki castella in one go in 60 minutes.
There's no need to skim off the foam or cover the cake with an ash iron plate, and there are no manual steps involved.

We use a newly developed confectionery flour mix called "Nanban flour" to make the dough, significantly reducing the time.
