Enrichment of lycopene in watermelon by membrane technology

Watermelon is a fruit being popular in tropical countries, especially Vietnam. This fruit has been known as the source of lycopene for human health. Normally, watermelon fruit is used as fresh cut or processed into the juice. However, the content of lycopene in juice is slightly low comparing to demand of human. Thus, it is necessary to enhance the content of lycopene in watermelon juice. This research developed the separation technology based on membrane to enrich the lycopene in the juice. Water melon juice with high content of lycopene can be used as a kind of functional food or production of powder being rich in lycopene, which can be used as supplement in food, cosmetic and pharmaceutical industries.
The enhancement of lycopene content in the water melon juice has been conducted by ultrafiltration membrane with 100 kDa of molecular weigh cut off at 6 bar of operation pressure and ambient temperature. The content of lycopene in the juice reached, approximately, 8.5 folds higher than that in the feed. The content of total solid in juice increased approximately 15% compared to hat in feed (8.45 oBrix). Recovery yield of lycopene was approximately 100%. The loss of antioxidant capacity in juice was lower than 10%.
In addition, the spray drying to form the powder of the juice obtained from ultrafiltration was also conducted. The powder of watermelon juice was shown the high solubility antioxidant capacity, lycopene content and still remain the red color. It means that the powder can be utilized as a supplement of lycopene for human.
These features of research indicates that ultrafiltration can be applied for production of water melon juice being rich in lycopene and refinery for lycopene production. Moreover, it can be integrated with spray drying to produce the powder being rich in lycopene for using as a supplement.
