本研究の主旨

Dr. Yen-Con Hung is a professor in the Department of Food Science and Technology at the University of Georgia. His research is applying innovative processing techniques (microwave, high pressure, freezing, electrolyzed water) to enhance the safety and quality of food. To address consumers concern on produce safety, he has demonstrated using consumer-size electrolyzed oxidizing (EO) water, ozonated water generators plus some common chemicals like bleach and FIT® to add additional protection to food safety in the home. Quality of water particularly hardness used to prepare the above mentioned washing solutions will also affected the efficacy of the solution to inactivate foodborne pathogens. Research findings will be presented at the 2012 FOOMA in Tokyo.
