本研究の要旨

  The purpose of this research is to develop method of rapid ice formation to applicate on freeze concentration process and to decrease processing time, physical properties would be represented. Effects of ice-nucleating activity of microorganism on the freezing drying processing have been studied. But, there is no data of ice-nucleating activity on the food freeze concentration.
  As a result of this researching, high quality products of freeze concentration would be obtained. We are going to expect good research result to applicate to fruit concentration processing. Utilizing a result of this research, the efficiency of freeze-concentration machinery would be increased.
